So why are multilayer, high barrier plastic bags best for storing green coffee? We have found that a bean's potential cup quality can be degraded by environmental changes, particularly in moisture levels. Green coffee is really a dried seed with an ideal internal moisture level of 10-11%. Without proper storage, green coffee will absorb moisture in a humid environment and lose moisture in an arid environment. Light roasts might fit nearly 1 pound whereas darker roasts will squeak by with 12 ounces, so we consider it a 12 oz. tin.\u003cbr\u003e\u003cbr\u003e\nIt seals quite nicely with the white flexible plastic insert, forcing CO2 from fresh coffee to exit from the valve on the bottom. CO2 will push out O2 in the process, so if you fill this tin promptly after roasting you should have an oxygen-free environment for your coffee ... well, until you open it.\u003cbr\u003e\u003cbr\u003e\nWe like this tin because it is plain, ready for you to customize and reusable. One important detail to note: this tin should not be washed with water! The valve has a paper filament and won't function if it gets wet.
