(I guess there is some debate about the name - some sell it as Skelton, some Skeleton. But the box says Skerton, so we are sticking with that.) The Pro has some great improvements over previous models - an improved hand crack, redesigned jar for better stability, and a hard plastic lid that locks into place. The added burr stability makes for a far more consistent coarse grind. Best of all, grind adjustments are greatly simplified - you can now adjust the grind directly below the burrs, rather than taking apart the entire hopper. \u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003e The Skerton mill has ceramic burrs and a very sturdy construction. The grind quality is very good, and the mill grinds efficiently, fairly quickly, but not too fast. Like any manual mill it takes some elbow grease to crank out a grind, but the workout is worth it!\u003cbr\u003e\u003cbr\u003e It has a conical burr design, so it can do a range of grinds from espresso to a decent French press grind. The top part is plastic, the bottom is a glass jar. The top acts as a lid, so technically you could grind and then store the coffee in the base; but who would do that? It does make a handy travel grinder - especially if you remove the glass part and grind directly into a brewer, like a cone or an Aeropress. Lastly, it needed to have a somewhat approachable price.\u003c\/p\u003e\n\u003cp\u003eWe found all those things in this new hand grinder, plus a great new feature too! Unlike previous models where you had to take off the grinds catcher and tighen or loosen the burr directly from the bottom, this model has an external ring adjustment that is much easier to use, read and adjust. This will be especially welcomed by those who brew with different methods, e.g. Chemex in the morning and Aeropress in the afternoon, or who switch between coffees often. Even if you're a set it and forget it person, it's just easier and nicer to use.\u003c\/p\u003e\n\u003cp\u003eThe level of adjustablity is good too, there are 180 (!) levels of grind adjustment. This is also one of the more confusing aspects though, since there are only 60 notches. But you can go past zero twice (for 3 full rotations) which equals 180 \"clicks.\" While there is a lot of adjustability and the grinder goes very fine, it's hard to call it an espresso grinder. It may work for some people, but the grind is not perfectly consistent at each setting. For the price point and for pour over, we consider this a non-issue. But a $300 Commandante this grinder is not.\u003c\/p\u003e\n\u003cp\u003eIf you look closely, there's a scale on the outside of the grind adjustment ring with some suggestions about which settings to use depending on your brewing method. It's a coold idea, but we didn't find it super useful. So we think it's best to use your own experience and intuition to set the right grind size.\u003c\/p\u003e\n\u003cp\u003eWe talk about hand grinders being relatively “effortless” but it always takes some effort, right? That being said, if you have memories of hand grinders with ceramic burrs in your past, you will be surprised how quick and easy it is to churn out coffee with this by comparison.\u003c\/p\u003e\n\u003cp\u003eThe grinder has an aluminum chassis, stainless steel crank handle and shaft and hardened SU 420 stainless conical steel burrs in a “6 star” pattern. The shaft is supported by 2 sealed metal bearings. Capacity depends on the coffee and roast level, we use up to 28 grams medium City+ roast.
