With freshly ground coffee and good quality water, you can make a world-class cup. The challenge of pour-over brewing is in the technique, although some types of drippers are easier than others.\u003c\/p\u003e\u003cp\u003eHow do you choose which dripper to use? Some brew slightly more than others, such as the Clever, but most have a wide 1-4 cup range. There are Melitta type drippers, like the Bonmac, that have small holes and use the Melitta type cone filter. That's a different filter than the V-shaped Hario type, that comes to a point. Hario V60 brewers and the type (like Origami) have a single, larger hole in the bottom, and we think they require a more controlled pouring technique. A \"gooseneck\" pour kettle is best. Chemex brewing is similar, but with the unique folded filter, and the fact it's a combined filter-holder and carafe. \u003c\/p\u003e\u003cp\u003eKalita Wave flat-bottom dripper are unique, and the folds in the paper introduce increased air flow and surface area for brewing. But that wood collar with the leather band on the traditional Chemex models is a bit anachronistic. I mean, it serves a function; you do need some insulation for your hand as you pour your Chemex coffee.\u003cbr\u003e\u003cbr\u003eIf you don't like 70's aesthetics, you have an option with this 3 cup model.. It's sleek, it's clear and makes coffee the same as the other Chemex models. Being much more compact than it's larger siblings, it's the right choice if 6 cups is just too much coffee.\u003cbr\u003e\u003cbr\u003eThe glass handle is thick and sturdy but hey, it's glass. My estimation is that you would probably crack the carafe itself long before you would crack the handle, so this model is no more or less fragile than the others.\u003cbr\u003e\u003cbr\u003eThe key advantages to using a Chemex are still true: the coffee-water mixture is the right temperature (between 195-205°F) from the beginning of the infusion; you control infusion time based upon the fineness of your grind and pouring technique; and lastly (and I think, of great significance) is that you can keep this system very clean. It yields about 16 fluid oz. of coffee.\u003cbr\u003e\u003cbr\u003eA disadvantage of paper filters is they can impart a flavor to the brew, especially the thick Chemex filters, so pre-wetting the filter is key to excellent brewing especially since paper taste and heat loss are more noticeable when brewing with smaller brewers.\u003cbr\u003e\u003cbr\u003eYou will need to buy Chemex filters. Other brands of filters don't work well with Chemex because the drip opening is large. The weight of the coffee and hot water will probably make a thinner filter break at its seam. A flat bottom allows for the bed of ground coffee to form into a wider shape in comparison to a cone or V-shape brewer. So what does this all mean? Is a flatter bed of coffee better? Not necessarily...but we think it's easier to evenly pour hot water through a wider, flat surface that drains at a moderate pace. The three small holes in the base allow for good drainage while being restrictive enough to give you a good extraction. Aside from the mild horizontal ridges, the Kalita's walls are smooth and the waves on the wall of the filter are what create the space which allows coffee to flow filter through the paper. We would trust this dripper to withstand the abuse of travel, camping, etc., but it's not a thick-walled beast. One could easily bend the metal with a little force. It's lightweight and has a delicate feel to it. That is what I asked when I first saw the Hario V60.\u003cbr\u003e\u003cbr\u003eI was used to Melitta-type filtercone holders that have 1, 2, 3 holes in the bottom. The fewer holes, the longer the coffee and water tend to infuse. More infusion means more extraction of soluble solids, which means more flavor in the cup.\u003cbr\u003e\u003cbr\u003eBut what I found was that the Hario V60 can result in excellent brews if you use the right pouring technique. It's all about the pour. You don't just dump a load of water on top of coffee grounds in a V60 and get a good cup. It doesn't do it for you ... you must coax the extraction of solids from the grounds, and this involves both a good pace and good pattern in how you add water to the coffee.\u003cbr\u003e\u003cbr\u003eI would say that you need, yes need, a kettle with a thin spout similar to a Hario Buono to get a good cup from the V60. After that, you can slowly pour hot water until the correct ratio of water and ground coffee is met.\u003cbr\u003e\u003cbr\u003eYou can still get great results without a fancy pourover kettle and this humble Melitta-type cone beat all our other drippers in 2 different double-blind pour-over brewing tests.
