This delicate Gesha coffee makes an excellent light roasted brew, where elegant sweetness is accented by aromatic notes of fragrant teas, light floral suggestions, and acidity has a soft citric dimension. The fragrance of the dry grounds showed notes of semi-refined sugars, demerara, with faint fragrance of herbal tea, and dried flowers. The wet aroma was caramel-y sweet and more substantial, like Dulce de Leche caramels, with a malty note, and a light hint of jasmine. Floral Gesha characteristics come through most at City roast level, and make a mild impact on clean, simple-syrup sweetness, enlivened with a brisk note of lemon that informs the acidity. The coffee cools to lightly perfumed hints of jasmine, followed by fresh herbaceous notes of coriander, and green tea. It's important to keep your roast light, City-City+ maximum, or risk obfuscating the delicate aroma with roast tone. I recommend Behmor users try to shorten the overall roast time by trimming their batch size to 200-250 grams, using the hottest heat settings, and cooling with the door open if you can stand it!

Origin & Farm Notes
This Gesha coffee is from a farm called Finca Rosita, in the town of Illimani, a high Andean Mountain region of Caranavi. The farm was named after the matriarch, Rosita Angelica Aramayo, and continues to operate under the care of the Aramayo-Valverde family. The farm is 32 hectares in size, stretching from 1350 all the way up to 1750 meters above sea level. Most of the farm is planted in Catuaí, a highly productive dwarf variety common in South America that's a cross of Mundo Novo and Caturra. They also have newer plantings of Java, Typica, Pink Bourbon, and Gesha too. This Gesha lot separation from the farm was just 10 bags. The Aramayo family have their own dry mill on the farm and manage all of their own quality separation from when the cherries are harvested, all the way through the dry milling process.
