Full Cupping Notes

The fragrance showed a mild molasses sweetness in middle roasts, with a hint of earthy fig, and a tanned leather. Sweetness gets a bump in the wet aroma, with notes of caramel and dark corn syrup coming through in the steam, along with savory-sweet nut accents, and a base layer of cocoa powder. City+ roasts brew up a well-rounded cup with prominent bittersweetness. Flavor profiles of nutty baked goods brought to mind granola bars with chocolate chips, hints of almond meal, and walnut bread. Full City roasts showed chocolate-covered almond, thick body, and creamy hazelnut chocolate spread in the finish. Dark roasts are perfectly suited for milk drinks, a sentiment echoed in espresso shots too. I only had enough coffee for a single pass in my machine, and even my less-than-perfect shot proved its worth. (for those who care, 18g of coffee yielded 18g espresso over 35 seconds). The creamy profile offered rich dark chocolate notes (think 70% cacao bar), a hint of candied citrus peel, and toasted almond in the finish.

Origin & Farm Notes

Fazenda São Joaquim is operated by Jose Renno Moreira and Gustavo Moraira, who are the fourth generation growing coffee on this land. Through the years they've expanded their land to include 500 hectares along a 7km stretch, which is quite long! Of this, 150 hectares are planted in coffee. We had the pleasure of visiting the farm last August, and were impressed by their approach to farm management, and technical efficiencies they're implementing onsite. For one, they use a lot of organic inputs for plant fertilization. They have meters plotted throughout the farm that are used to gauge changes in weather that might affect how much nutrition the plants need. They also rely on 100% solar power for farm production and processing, and even power some of the houses with the excess power that's generated. Their farm spans an altitude range of 850 to 1150 meters above sea level, and is planted in Mundo Nova, Yellow Catuai, Icatu, and Arara. They also hold RFA, 3A, and Cafe Practices certifications, though this lot was not purchased with the certification.
