Full Cupping Notes
The dry fragrance shows layers of complex sweetness, light brown sugar, maple, and a whiff of coffee cake. The wet aroma has more focused cooked sugar sweet smells and the crust emits a ginger snap/spice cookie scent, with brown sugar and dried fruited hints. The brewed coffee of City+ roasts have a very sweet undercurrent, with clean bright notes that gives off ample acidity. Raul Hector's coffee shows soft fruited tones as it cools that draws out brightness a bit, an understated apple note when roasted light, and more raisiny/dried fruit when roasted to Full City. Origin & Farm Notes
The growing region in La Plata where this coffee is from sits high above the Rio Páez on a ridge called San Francisco Alto. This is a single-producer lot, part of a farmer group who formed in this region a couple years back. Raul Hector Trujillo's farm, El Guayabo, sits at 2000 meters above sea level and is roughly 3 hectares in size. It is planted mostly in Caturra along with a small amount of Variedad Colombia too. The coffee is processed at home using a small depulping machine, then the coffee is fermented for about 14 hours to remove the sticky mucilage layer and finally laid to dry on raised beds in covered "parabolicos" (green house structures that help facilitate even drying). This is now the third year we've purchased from Trujillo, who has become somewhat of the model grower to this La Plata association due to the exemplary quality of both physical green and cup quality. And visiting his farm it's clear that he focuses on coffee quality when seeing the care he's put into his newly built raised drying beds, cleanliness of processing equipment and careful cherry selection when harvesting.
