The fragrance gives off bittersweet roast intensity, dark cocoa powder, chocolate cookie, with hints of burnt sugars. The wet aroma also carries intense bittersweet notes, baking chocolate, and even a hint of black pepper. I'll tell you what, the acidity was a bit of a surprise in the cup. It's not exactly a "bright" coffee either. But light roasts offer a black tea-like accent that bring a nice accompaniment of vibrance to the cup. With the background bittersweetness, it comes off like steeped cacao, or a thin cocoa drink. City+ roasts double down on the bittersweet flavors, with emphasis on bitter chocolate notes like dark cocoa with baking chocolate bittering in the aftertaste, along with a pine-y accent that brings a subtle herbal quality to the profile. This coffee will pair very nicely with milk, but perhaps doesn't offer the level of body I look for in an espresso option.

Origin & Farm Notes
Om David is a coffee collector from Bajawa, in Flores' Ngada District. "Collectors" act as an important intermediary who buy coffee cherry from local farmers, and then in the case of David, process it down to dried "parchment" coffee (green coffee seeds with their parchment layer still intact). This lot is a blend of small lots from farms in Wolo Bobo village. Most of the coffee is processed on hand-cranked or small, motorized pulping machines at the farm. The coffee is typically fermented in buckets or small tanks, and then dried on raised beds. Because of the nutrient rich soils, they are able to grow coffee using fully organic farm practices, though they are not certified at this time. Mountain peak areas are referred to as "Wolo"s, the main mountains being Wowomuda, Lobotbutu, and the active volcano, Babomuda.
