Full Cupping Notes
The dry fragrance of this lot from Aler Villatoro has a subtle stone fruit note atop sweetness of caramel and orange honey. The wet aroma showed more almond nut tones up front, but with a very nice peach tea note behind it. Tom commented that he thought it smelled a lot like Rwandan coffee, and I have to agree! The brew highlighted these features too, with a creamy honey-sweet base flavor accented by hints of dried stone fruit and tea. Ample bittersweetness comes up in the cup, but the fruited aspects play off acidity a bit, resulting in a balanced but lively profile. Sweetness is nicely developed at City/City+, with dark brown sugar and caramel notes that come to a point in the cleanly dissappearig finish. Aler's coffee cools to bittersweet cocoa powder, and a hint of dried apple. At Full City, chocolatey flavors help build sturdy base bittersweetness propped up by body. It has all the markers of standout espresso. Even with little rest, my Full City roast yielded a velvety textured shot, cocoa-toned, bean-to-bar dark chocolate, and bright green apple accent brought a lively side to the bittersweetness.

Origin & Farm Notes
This coffee is from Aler Villatoro, one member of a family group we buy coffee from in the La Libertad district of Huehuetenango. He has two farms in the town of Peña Blanca, both ranging in altitude from 1700 to 1850 meters above sea level. Aler's family have also built out a sizable wet mill operation in the next town over, complete with depulping machine, washing channels, and large cement patios for drying coffee. It's built alongside the river which is the water source for washing the coffee. Aler and his cousin Aurelio also built a mill called "Punta del Cerro" in the neighboring town where they buy and process coffees from other local farmers. (We have some lots from that effort on the way with "del Cerro" in the title). This coffee comes to us through a joint effort of a local micro-mill owner and intermediary to us who are able to process and separate the micro-lots we approve. The coffee is then sent. to a highly sophisticated dry-mill who handle the finishing touches like removing any remaining defects, packaging, and then export the coffees for us.
