The fragrance and aroma smelled sweet and well-balanced, with notes of caramel and dark sugars accented by hints of butter cookie, and cocoa. The brewed coffee also boasted the markers of a great "daily driver" type coffee, one that I want to drink every day, and with balanced flavors that find me reaching for a second cup. At its core, there's an enticing interplay between caramel-y sweetness and smokey roast taste, and leads to profiles of dark chocolate-covered caramels, and walnut brownie. The coffee does have some acidity at light roast levels, but fairly mild, and well-integrated in the bittersweetness. Full City roasts develop thick, creamy body, with notes of hot cocoa, and dark chocolate bar (something like Ghirardelli 72% cacao bar). Espresso shots of Full City roasts are teeming with chocolate bittersweets that will pair well with steamed milk.

Origin & Farm Notes

Guilmer's farm is located in the community of Bojonalito, a small village within the larger municipality of La Libertad, Huehuetenango. His farm is situated right around 1700 meters above sea level and planted in a mix of Bourbon, Caturra and Typica. The coffee is wet process, meaning depulped and then using fermentation to remove the sticky layer of fruit before moving to the drying patio. The dry parchment is then transported to Huehue town where it is dry milled and prepared for the final transport to the US.
