Its fluted edges and material make it so that you're able to fold into the center without cracking, and funnel whatever contents—green coffee, roasted coffee, chaff, lentils, nuts, what-have-you—into your roast chamber or other containers with no issue. If you've ever tried to pour out a batch from your Behmor drum, or straight out of your air popper, into a coffee bag... you know why this little thing helps.\u003c\/p\u003e\n\u003cp\u003eBesides that, they're pretty helpful for cupping set ups, displaying, analyzing and lovingly gazing at your finished roast. Compared to our previous glossy cupping trays, these are slightly stiffer and shorter, length-wise.
