Full Cupping Notes

The fragrance has dark-toned scents of chocolate milk, chocolate biscuit, and subtle hint of berry. Sweet smells are developed in the wet aroma, like molasses, a hint of rustic fruit, and a Oreo cookie. At City+, the cup has heavy body, which lends to creamy cocoa and caramel notes in the cup. Thick body and low-toned bass notes rated high for me, but there was quite a bit more going on in the cup. As it cooled, a dark malt beer aspect emerges, Guinness stout, leading to reverberant chocolate tones into the aftertaste. The cup aroma comes through as the coffee cools, with notes of cinnamon cocoa powder, Chai spice, and burnt sugars. The acidic impression was mild-to-moderate, which is often the case with honey process coffee. That said, it didn't feel as if the coffee needed more structure, or lacked dimension. Full City roasts are inky and bittersweet, with dark herbal notes of horehound candy, aromatic anise, and a pungently bittersweet finish.

This small 10 bag lot of honey process coffee comes to us by way of a 3rd generation Sulawesi farmer named Yolan Tirta. Not only does Yolan manage his own coffee farms, he also works with small holder farmers in nearby towns to help improve post-harvest processes, and ultimately the quality of their coffee. This lot is from a group he is working with in the town of Angin Angin, who along with Yolan, have made it their mission to put Enregkang back on the map as a top producer of Sulawesi Specialty coffee. Having won 3rd place at this year's Cup of Excellence competition with another honey process lot, Yolan and the Angin Angin farmer group are well on their way to achieving that goal! Coffee farming in Enrekang region predates the Toraja, a much more well-known coffee region, by decades, and in fact was ground zero for the Sulawesi coffee trade for many years. Not only does Angin Angin have the historical pedigree, but the community are also situated on the highest mountain peak in all of Sulawesi, Litimojong. The farms range in altitude from 1500 to 1800 meters above sea level, and most are growing Typica cultivar types. This honey process coffee boasts big body, complex sweetness, and an array of interesting top notes like fruit and dark herbal notes.
