Full Cupping Notes

Cabrejo shows high level of sweetness at a wide range of roasts, with bright accents and a spiced finish traded for more dominant bittersweets at darker levels. The dry fragrance and wet aroma showed complex notes of cane sugar and maple, subtle hints of vanilla, and cinnamon. These sweet scents offers a glimpse into the brewed coffee that proved to work their way into both our roasts. City/City+ roasts show impressive cup clarity. The base flavor has a sweetness of raw sugars and crisped caramel, with a vibrant lemon black tea note, vanilla bean, and some bittering baking spice in the finish. At Full City, a cinnamon-spiced chocolate flavor takes over, with intimations of oatmeal cookie, and hints of dried raisins. Cabrejo's acidity still comes through at Full City, but to a much lesser degree than when roasted light. My Full City roast doubled nicely as single origin espresso, viscous and with syrupy chocolate notes, and citrus rind brightness up front that fades to a hint of whole cloves in the finish.

Origin & Farm Notes

As you descend into the picturesque town of Antigua on the road from Guatemala City, you will see an old brick wall and the unlikely gold script lettering that reads "Cabrejo." This is the entrance to the home of Agustin Fashen, and the gateway to the lower part of Finca Cabrejo that lies between the one-way roads in and out of Antigua. To get to the higher part of the farm, you will find a much less ornate sign, if you can find it at all. It spans a wide range, from 1585-1920 meters, and on our first trip several years ago, the trees seem to be in various stages of care, various types, various ages. But in recent years, Cabrejo has undergone serious renovation, adding better road access, pruning some of the older trees, and replanting several parts. The current shrubs are mainly Bourbon, Villa Sarchi, Caturra and some Catuai. Actually, we found some very old Arabigo (Typica) plants as well, and some had yellow fruit.
