Full Cupping Notes

The fragrance of Finca Pavón has butter toffee sweetness in the ground coffee, with almond, and subtle umami notes in the background. The wet crust is caramely-sweet at City and City+. Breaking through the crust released a sweet scent of caramelized sugar, with bittersweet balance behind it, and a dried fruit accent. The coffee from Finca Pavón is always a very nice example of an Antiguan Bourbon cup. The sweetness and bittering flavors are well-balanced, with notes of light brown sugar, hazelnut, cocoa, and sweet cream. Apple and pear accents offers subtle contrast when light roasted, which is also where modest acidity is most pronounced. Full City roasts develop rich roast flavors that combine with perceived sweetness to produce profiles of chocolatey desserts, like dark chocolate brownie, and flourless torte. This is a very forgiving coffee in the roaster, crowd-pleasing with balanced flavors at a wide range of roasts, and brew methods.

Origin & Farm Notes

Finca Pavón is located on the outskirts of Antigua town, an area we've been actively buying coffee from for several years now. The farm gets its name from the original owner, Manuel Francisco Pavón. Pavón was a member of the agriculture department, and as such had access to endless farming information. He planted Finca Pavón in Bourbon back in the mid 1800's, which is basically, still the dominant varietal today. When current owner Marina Duran inherited the farm, it was in dire straights, unkempt, nowhere near being lucrative as a coffee farm. She cleaned it up quite a bit, and because of the inherent trouble with compact soil and root ventilation in the area (also causing flooding because of these factors), continuing the sole planting of Bourboncito (Bourbon 1800) made for a good option to thrive in this environment, not compromising "Bourbon" cup quality. We were able to build this 50 bag lot from what we thought were the best lot separations from the farm.
