City+ roasts brew a relatively balanced Brazilian cup, with mild flavors that lean toward high cocoa solids chocolate, mild acidity, and savory hints of toasted nut. The fragrance and aroma offered muted sweetness of rustic sugar, savory hints of pecan and sesame, with dark cocoa underlay. Umami/savory notes are balanced out in the brew by a light sweetened of barley malt syrup, chocolate-covered nut, fading to to darker-toned bittersweetness in the aftertaste. Body is noteworthy, and has a thick, creamy texture that, along with the subtle sweet notes, brought to mind almond milk. At Full City+, the brew had a very pleasant bittersweet-savory note, like dark chocolate cookie with sea salt. The low tones are sure to punch up through cream, and low acidity makes this a great coffee option for classic-toned bittersweet Brazilian espresso.

Origin & Farm Notes

This coffee is from Patricia Carvalho and Gabriel Wagner, a daughter/father team who manage their century-old family farm, Sao Jose in Brazil's Mantiqueira de Minas growing region. This area boasts modest altitudes for Brazil, and the farm is on a relatively steep-sloped grade that goes from 950 meters above sea level up to about 1300 meters. The coffee is pulp natural processed, which means the cherry is removed before drying, and then the seeds are dried with some of the fruit mucilage intact. Pulp natural coffees produce a bit more chaff than washed coffee when roasting, but they also tend to be more refined than dry process coffees from Brazil This coffee was purchased through an exporter in Minas Geraís who we were introduced to last year. We were really impressed with the quality of the samples they sent us. Dani, who manages operations and is a farmer herself, offered us access to a lot of new opportunities around Minas Geraís, working with small farmers like these.
