Product Overview
Full Cupping Notes

The dry fragrance shows some dark sugar sweetness at light and medium roast levels, underscoring a pastry smell, along with a note of honey-sweetened milk chocolate. The wet grounds tease out dark sugars, caramel and a light hint of raisin. Light and medium roasts present rounded sweetness in the cup, a tasty vanilla note accents dark brown sugar and semi-sweet chocolate bar. A moderate acidity level was conveyed in my City roast, like lemon tea, with a bright tangy aspect in mouthfeel. The cup cools to accents of chocolate malted grains and some pungent cocoa in the long finish. Darker roasts further develop the bittersweet flavors, higher % cacao chocolate bar, chewy fudge, and dense chocolate torte. Like most honey process coffees, expect more chaff when roasting. It's not excessive to the point of creating a fire hazard, but a good idea to vacuum between roasts. It can also impair your ability to judge the exterior color of the bean to some degree when roasting so pay close attention to audio queues, as well as visual, during the roast process.

Origin & Farm Notes

This lot is a blend of coffees from the various plots managed by the Solis family at their La Casona micromill in Tarrazu. This particular lot was honey processed, which means that they forgo fermentation to remove all the fruit, instead leaving a thin layer of fruit mucilage intact with the coffee during the drying stage. A simple adjustment to the demucilager affects how much fruit is left intact after depulping, and "yellow" honeys are typically the least amount of fruit (it turns a yellow color when it dries - hence the name). There is a bit more chaff produced during roasting than a fully washed coffee, but nowhere near the amount of dry process or honey process coffees. The city of San Marcos is in the Talamanca Sierra highlands, with peaks reaching as high as 3000 meters. It's an ideal micro-region and climate for growing coffee with rich volcanic soil, great altitude, and is shaded from the hot afternoon sun by mountain peaks. The farms surrounding the La Casona mill top out at 1900 meters above sea level.
