Flory Villatoro's coffee is in that "daily driver" category of coffees that are well-balanced and sweet at a fairly broad range of roasts, with just a touch of acidity that adds nuance to the pleasantly mild cup profile. The ground coffee had notes of caramel and toffee, whereas the wet aroma had more bittersweetness, the richness of chocolate brownie with a drizzle of caramel. I found City+ roasts to be the perfect balance of sweetness and acidity, a sprinkling of light brown sugar, demerara types, butterscotch chips, and moderate acidic impression that's apple-like/malic. The cooling cup offers a hint of cinnamon powder too, but quite mild. Acidity is milder at Full City, where darker roast flavors are the focus; dark chocolate truffle, ganache, and some gritty bittersweetness in the aftertaste.

Origin & Farm Notes
This coffee is from farmer Flory Villatoro, from the village of Peña Blanca in Huehuetenago's Libertad Department. While we often construct regional blends, we thought the two lots Jose delivered last year deserved to be showcased outside of a blend. When it was all said and done, there were 19 bags of coffee, which means it won't be a flash in the pan! Flory Villatoro's farm is situated around 1800 meters above sea level, planted in Bourbon, Caturra, Catuaí with a sprinkling of Typica trees scattered throughout. This coffee comes to us through a joint-effort of a local micro-mill owner who is able to process and separate the micro-lots we approve, and a highly sophisticated dry-mill who handle the finishing touches and export the coffees for us. It's also part of our "Proyecto Xinabajul" small holder project in the region, which you can read more about HERE.
