Full Cupping Notes
While not a big body coffee, this Fair Trade Organic decaf draws out convincing sweetness in the City+ to Full City ranges, with subtle top notes that add a touch of complexity to core bittersweets. The fragrance has a scent of cinnamon swirl bread with accents of brown sugar, and milk chocolate peanuts. Adding hot water brings up more of the spice/malt aspects of baked goods in the steam, pumpkin loaf, with a savory nut note. City+ proved to be a good starting point to build out sweetness a bit, notes of cinnamon roll, cocoa, and malted beer grain. A coriander spice note in the aroma gives the cup a delicate aspect, and recalls spiced wheat ale. Darker roasts will broaden the range of bittersweets, but shows lighter body overall.

This Peruvian coffee underwent a chemical-free, water process decaffeination method designed to extract caffeine while minimizing loss of compounds that affect flavor and aroma. We found this lot to be quite convincing on a table of non-decaf coffees, though it doesn't exactly blend in altogether. Compared to some of our other decafs, Alto Mayo has pleasant acidity and delicate top notes, especially around City+ roast level. The coffee used for this lot comes from a coffee cooperative called, Central de Cafetaleros del Nororiente. They work with farmers in several different growing regions, including Amazonas, Cajamarca, and Lambayeque. The coffee is grown at a wide range of altitudes, from around 1300 meters to as high as 2250.
